If you managed to buy a sturgeon, then your table will be truly royal. After all, earlier such fish was served only at royal feasts. Baking sturgeon is not difficult at all, at least not more difficult than any other fish.

We will need:

  • sturgeon - 3-4 kg
  • cherry tomatoes - 10 pcs
  • cucumbers - 2-3 pieces
  • olives - 10-15 pcs
  • cranberries - 0.5 cups
  • lemon - 2 pcs
  • lettuce leaves - 400 gr
  • dry white wine - 150 ml
  • vegetable oil - for lubrication
  • salt, pepper to taste

Cooking:

1. Peel the sturgeon from the insides and rinse thoroughly. Dry with paper towels.

2. Rub with salt and pepper inside and out. Then sprinkle with lemon juice inside and out. Lubricate with vegetable oil and let lie down for 20-30 minutes.

3. Line a baking sheet with foil so that hanging edges remain. We will wrap the fish with them. It is best to make 2-3 layers of foil, so it will definitely not tear and all the juice will remain inside.

Lubricate the sturgeon with oil.

4. Put the fish on foil, pour wine on top and carefully seal. We send it to the oven preheated to 180 degrees.

5. Bake for 20 minutes. Then open the foil and bake for another 15-20 minutes until a beautiful golden crust is formed.

6. Carefully lay out the finished sturgeon on a large flat dish, and decorate with tomatoes, cucumbers, lettuce, olives, cranberries and lemon. And also decorate the head and tail with mayonnaise or sour cream.
